Parsnip and Apple Soup


Farm Fresh Rhode Island


3 parsnips, peeled
6 apples, peeled, cored
1 gallon water
1 teaspoon nutmeg
1 cup maple syrup
Salt (to taste)


  • Gather and wash all ingredients.
  • Rough chop both the parsnip and apples.
  • In a boiling pot, place the parsnip and apples.
  •  Boil for at least 30 minutes or until the parsnip is tender.
  •  Once the parsnip and apple are tender, blend in a mixer until smooth, and then add the remaining ingredients.
  •  Serve hot or cold and enjoy.
