How Sandy Changed Her Diet

When Sandy received the first issue of The Rhode Ahead, she was inspired by the cover story about eating a whole foods, plant-based diet. “The article mentioned that 100 Blue Cross employees were trying the diet, so I figured it must be a good thing.”

How did eating a plant-based diet improve your health?

"I lost about 10 pounds and my skin is clearer and smoother."

Do you plan to stay with this new way of eating?

"I have no desire to go back to my old diet. I’ve always tried to have a healthy lifestyle—walking and exercising and all that. But I’m getting ready for my 80s now and I feel like I need to take it to a different level."

What are your favorite meals?

"I’m not really a gourmet cook. I make a lot of vegetables, fresh and frozen. I eat shredded wheat, fruit smoothies with almond milk, strawberries, blueberries, oatmeal, peanut butter. One of my favorites is garden burgers with hummus and spring mix on pita."

What motivated you to change?

"I want to be as healthy as possible. My husband has a few health issues, so I always cook extra and give him a big bowlful. I want him in tip-top shape."

Do you exercise too?

"Yes, I work out at a studio two days a week. I do Pilates and and TRX training, which was developed by a Navy SEAL. You use your whole body weight as resistance. I really feel the difference in my body—you just feel powerful."
